Terrines [teh-reen]

Terrine most commonly refers to a French meat loaf, which can be very similar to that of a pâté, cooked in a mould and made with more coarsely chopped ingredients. It is a wonderful combination of meat and vegetables, with the addition of herbs and spices. Often made with Poultry, Meat or Game and, in more modern times, fish.
