Long before refrigeration, Terrines took pride of place on many a dinner table, using a layer of bacon or Gelée to naturally preserve the meat. Our only addition to the traditional method is to add refrigeration. All this modern technology is outrageous!

Working for two days with the best Pork, Veal, Game, Chicken and Duck, as well as our secret mix of spices, it is hardly surprising that our kitchen smells wonderful. When the hard work is over and it's sliced and packaged, all you have to do is take time out and enjoy. How simple is that?
